5 red potatoes
125 ml reduced-fat mayonnaise
30 g grated Parmesan cheese
22.5 ml Dijon mustard
20 ml cider vinegar
2.5 ml cayenne pepper
2.5 ml salt
1.25 ml ground black pepper
1.25 ml paprika
1 red onion, thinly sliced
2 green onions, chopped

Prepare all the ingredients.
Step 2
Place the red potatoes in a large pot, cover with salted water, and bring to a boil. Reduce the heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain the potatoes and cut them into cubes.
Step 3
In a large bowl, whisk together the reduced-fat mayonnaise, grated Parmesan cheese, Dijon mustard, cider vinegar, cayenne pepper, salt, black pepper, and paprika.

Add the cubed potatoes, red onion, and green onions to the bowl. Gently toss to combine all the ingredients.
