Ingredients

710 ml warm water (45 degrees C)
14 grams active dry yeast
160 ml honey, divided
600 grams bread flour
75 grams butter, melted, divided
15 ml salt
480 grams whole wheat flour, or more as needed

Directions

Step 1
Begin by gathering all the necessary ingredients.
Step 2
In a large bowl, mix warm water, yeast, and 80 ml honey until the yeast is completely dissolved.

Add the bread flour and stir until well combined.

Allow the mixture to sit for 30 minutes, or until it becomes big and bubbly.

Stir in 45 grams of melted butter, the remaining 80 ml honey, and the salt. Then, mix in 240 grams of whole wheat flour.

Transfer the dough to a floured work surface and gradually knead in the remaining 240 grams of whole wheat flour.

Knead the dough until it starts to pull away from the work surface, adding more whole wheat flour if necessary. The dough should be slightly tacky to the touch, but not too sticky.

Place the dough in a greased bowl, turning it once to coat the surface.

Cover the bowl with a dish towel and let the dough rise in a warm place until it has doubled in size, which should take 45 minutes to 1 hour.

Grease three 9x5-inch loaf pans. Punch down the dough, then divide it into 3 equal portions and place them in the prepared loaf pans.

Allow the dough to rise in the pans until it has topped the pans by one inch, another 45 minutes to 1 hour.
