Sticky Beer-Glazed Pork Ribs

These succulent pork ribs are slow-cooked to tender perfection and then glazed with a sweet and sticky beer sauce that will make your taste buds sing.

Ingredients

240g brown sugar
120g fajita seasoning (such as Fiesta®)
30g Hungarian sweet paprika
2 racks pork spareribs, fat trimmed
240ml beer
3 cloves garlic, minced
15ml honey
45ml Worcestershire sauce
15ml prepared brown mustard

Directions

Step 1
Start by mixing the brown sugar, fajita seasoning, and paprika in a bowl.
Step 2
Rub the brown sugar mixture onto both sides of the pork spareribs.
Step 3
Place the spareribs in a 23x33cm baking pan, cover, and refrigerate for 8 hours or overnight.
Step 4
Preheat the oven to 120°C. In a separate bowl, whisk together the beer, garlic, honey, Worcestershire sauce, and mustard. Set aside.
Step 5
Take 2 large sheets of heavy-duty aluminum foil, lay them shiny-side down, and place a rack of spare ribs on each sheet, meaty-side up.
Step 6
Tear off 2 more sheets of foil and place them on top of the spare ribs, shiny-side up. Begin tightly folding the edges of the foil together to create a sealed packet.
Step 7
Just before sealing completely, divide the beer mixture evenly into each packet.
Step 8
Complete the seal and place the packets side-by-side on a 28x35cm baking sheet.
Step 9
Bake the ribs in the preheated oven until they are very tender, for about 3 1/2 to 4 hours.
Step 10
Carefully open each packet and drain the drippings into a saucepan. You may only need the drippings from one packet.
Step 11
Place the ribs on a foil-lined baking sheet and set aside.
Step 12
Heat the saucepan over medium-high heat and simmer the drippings until the sauce begins to thicken, about 5 minutes.
Step 13
Brush the thickened sauce over the ribs.
Step 14
Preheat the broiler and set the oven rack about 15cm from the heat source. Return the ribs to the oven and broil until the sauce is lightly caramelized, for 5 to 7 minutes.
