Step 1
Begin by combining the whole wheat flour, all-purpose flour, and salt in a large mixing bowl. Use a wooden spoon to gradually incorporate the hot water and olive oil into the dry ingredients. Mix until a soft, pliable dough forms, adding more water if necessary.
Step 2
Transfer the dough to a lightly floured surface and knead it until smooth and elastic.
Step 3
Divide the dough into 10 equal portions, or fewer if you prefer larger roti. Roll each portion into a ball and allow them to rest for a few minutes.

Heat a lightly greased skillet over medium heat. Use a rolling pin to roll out each dough ball on a lightly floured surface until it forms a very thin round.
Step 5
Once the skillet is hot, place a roti on it and cook until the bottom develops brown spots, approximately 30 seconds. Flip the roti and cook for an additional 30 seconds until it puffs up and is lightly browned.
Step 6
Repeat the process with the remaining dough portions, stacking the cooked roti on a plate and covering them with a clean kitchen towel to keep warm.
