5 large potatoes, peeled and sliced
30 ml bacon drippings
6 ramps, thinly sliced
5 slices cooked bacon, chopped
salt and ground black pepper to taste
Step 1
Place the sliced potatoes in a large pot and cover with salted water. Bring to a boil, then reduce the heat to medium-low and simmer until the potatoes start to soften, about 10 minutes. Drain and set aside.
Step 2
In a large skillet, heat the bacon drippings over medium-high heat. Add the parboiled potatoes and cook, stirring occasionally, until golden brown and crispy, about 15 minutes.
Step 3
Stir in the sliced ramps and chopped bacon, then season with salt and black pepper. Continue to cook, stirring occasionally, until the ramps are soft and fragrant, about 5 minutes.
