Ingredients

225 grams white sugar
225 grams butter, softened
85 grams cream cheese, softened
1 large egg yolk
0.5 teaspoon salt
0.5 teaspoon almond extract
0.5 teaspoon vanilla extract
280 grams all-purpose flour

Step 1
Let's start by gathering all the ingredients.

In a large bowl, use an electric mixer to beat together the sugar, butter, cream cheese, egg yolk, salt, almond extract, and vanilla until the mixture is smooth and creamy.

Gradually add in the flour and mix until a smooth dough forms.

Divide the dough into three equal parts and shape each one into a flat disk. Wrap them tightly in plastic wrap and refrigerate for at least 8 hours or overnight.

When you're ready to bake, preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit).

Take one disk of dough at a time and roll it out on a lightly floured surface to about 3mm thickness. Keep the other disks refrigerated until you're ready to roll them out.

Use your favorite cookie cutters to cut out shapes from the dough, and then place the cookies 2.5cm apart on ungreased baking sheets.

Bake the cookies in the preheated oven until they are a light golden brown, which should take about 7 to 10 minutes. Be sure to switch the baking sheets between the racks halfway through the baking time.
