240g pitted and chopped dates, or to taste
60ml cold water, or as needed
30g white sugar
5ml vanilla extract, or more to taste
165g self-raising flour
170g margarine
90g oats

Step 1
Begin by preheating the oven to 180 degrees Celsius (355 degrees Fahrenheit) and greasing a 23cm square baking dish.
Step 2
To make the filling, combine dates, water, sugar, and vanilla in a medium saucepan. Cook and stir over medium heat until the mixture becomes pasty, approximately 5 minutes. Add more water if the filling becomes too thick. Remove the saucepan from the heat and allow to cool.
Step 3
For the crumble, place flour in a large bowl and rub the margarine into the flour using your hands until the mixture resembles bread crumbs. Stir in oats and sugar until well incorporated.
Step 4
Press half of the crumble mixture into the prepared baking dish to form the crust. Spoon the filling over the crust, smoothing it with the back of a spoon and leaving a thin border between the edge of the dish and the filling. Sprinkle the remaining crumble mixture over the filling.
Step 5
Bake in the preheated oven until the top is golden brown, for approximately 40 to 45 minutes.
