Savory Russian Potato Salad
A delightful twist on the classic Russian salad, featuring a medley of boiled potatoes, carrots, and eggs, mixed with pickles, ham, and peas in a creamy mayonnaise dressing.
6 potatoes, peeled and diced
1 carrot, finely chopped
4 eggs
6 large pickles, cut into cubes
1 (15 ounce) can peas, drained
0.5 cup cubed fully cooked ham
1 tablespoon chopped fresh parsley
0.5 cup mayonnaise
Step 1
Start by bringing a large pot of water to a boil.

Add the diced potatoes and cook for 5-10 minutes. Then, add the chopped carrots and whole eggs, and continue boiling until the potatoes are tender, about 10-15 minutes.

Once cooked, drain the mixture and allow it to slightly cool.

Next, chop the potatoes and carrots, and peel and chop the eggs.

In a large bowl, mix together the potatoes, carrots, eggs, pickles, peas, ham, and parsley.
