Spiced Maple Glazed Holiday Ham

Ingredients

4 kg (9 pound) spiral-cut ham, refrigerated
60 ml apple cider
60 ml orange juice
15 ml cider vinegar
120 ml maple syrup
120 g dark brown sugar
80 g white sugar
30 ml whole-grain Dijon mustard
5 ml soy sauce
1.25 ml ground cinnamon
1.25 ml ground ginger
1.25 ml ground nutmeg
1 pinch red pepper flakes
1 pinch ground cloves

Directions

Step 1
Place the ham in a roasting pan and allow it to come to room temperature for 30 to 45 minutes.
Step 2
Preheat the oven to 150°C (300°F).
Step 3
In a bowl, mix together the apple cider, orange juice, and cider vinegar.
Step 4
Carefully open the spiral slices of the ham to expose more of the meat's surface area. Pour the juice mixture over the ham and cover with aluminum foil.
Step 5
Bake in the preheated oven until heated through, about 45 minutes.
Step 6
In a saucepan over medium heat, whisk together the maple syrup, dark brown sugar, white sugar, mustard, soy sauce, cinnamon, ginger, nutmeg, red pepper flakes, and cloves until smooth and shimmering. Simmer for 2 minutes, then remove from heat and let the glaze cool slightly.
Step 7
Increase the oven temperature to 200°C (400°F).

Remove the aluminum foil from the heated ham. Brush 1/3 of the glaze over the ham to completely cover it.
Step 9
Return the ham to the hot oven and bake, uncovered, for about 8 minutes. Repeat the process of adding glaze and baking for 8 minutes more.
Step 10
Remove the ham and baste it a third time with the remaining 1/3 of the glaze. Continue baking until the glaze is caramelized and bubbly, for 10 to 12 minutes. Remove from the oven and let it rest for 10 to 15 minutes before slicing. Drizzle the pan juices on top.
