Ingredients

45 ml soy sauce
15 ml sesame oil
2.5 ml ground ginger
1.25 ml white pepper
30 ml olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 carrots, peeled and grated
125 ml frozen corn
125 ml frozen peas
750 ml cooked brown rice
500 ml diced pineapple
125 ml diced ham
2 green onions, thinly sliced

Directions

Step 1
In a small bowl, whisk together soy sauce, sesame oil, ground ginger, and white pepper.
Step 2
In a large skillet or wok over medium-high heat, heat olive oil. Add chopped onion and cook until soft and translucent, stirring often, for about 3 to 4 minutes. Add minced garlic and cook for an additional 30 seconds. Stir in grated carrots, frozen corn, and frozen peas. Stir-fry until the vegetables are tender, which should take about 3 to 4 minutes.
Step 3
Add the cooked brown rice, diced pineapple, ham, green onions, and the soy sauce mixture. Stir constantly and cook until heated through, which should take about 2 minutes. Serve immediately.
