360g complete (“just add water”) pancake mix
475ml water
60ml maple syrup, plus more for serving
450g breakfast sausage, cooked, crumbled and drained
6 slices cooked crispy bacon, crumbled
150g shredded Cheddar cheese
30g softened butter
Step 1
Preheat the oven to 175 degrees C (350 degrees F). Lightly grease a 23x33cm baking dish.
Step 2
In a large skillet over medium-high heat, cook and stir the sausage until browned and crumbly, for about 5 to 7 minutes. Drain and set aside to cool slightly.
Step 3
Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels. Crumble when cool enough to handle.
Step 4
Whisk together pancake mix and water until well combined. Stir in maple syrup. Add sausage, bacon, and cheese and fold the mixture together until well incorporated. Pour mixture into prepared baking dish.
Step 5
Bake in the preheated oven until casserole is lightly browned, and a toothpick inserted near the center comes out clean, about 30 minutes.
Step 6
Spread butter over hot casserole and serve with extra syrup as desired.
