Ingredients

2 lobster tails, split along the center top
10g butter, melted
120g jumbo lump crabmeat
60ml clarified butter, at room temperature
15 buttery round crackers, crushed
15g chopped fresh parsley leaves
15ml fresh lemon juice
5g seafood seasoning (such as Old Bay®)
5g lemon zest
1 clove garlic, minced
1.25g salt, or to taste
1.25g freshly ground white pepper, or to taste

Directions

Step 1
Begin by preheating the oven to 220 degrees C (425 degrees F) and gather all the necessary ingredients.

Carefully separate the split lobster shells and arrange the tail meat above the shells. Place the tails on a baking sheet and generously brush the meat with melted butter.

In a mixing bowl, combine the jumbo lump crabmeat, clarified butter, crushed crackers, parsley, lemon juice, seafood seasoning, lemon zest, minced garlic, salt, and pepper, ensuring everything is well mixed.

Divide the crab mixture evenly between the lobster tails, gently pressing it down to ensure it stays in place.
Step 5
Bake the stuffed lobster tails in the preheated oven until the meat is opaque and the stuffing is beautifully golden brown on top, which should take approximately 10 to 12 minutes. Use an instant-read thermometer to check that the thickest part of the lobster tail has reached 65 degrees C (145 degrees F).
