Ingredients

1 bunch broccoli, cut into large florets
30 ml olive oil
3/4 teaspoons kosher salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
4 (170g) filets salmon
15 ml Dijon mustard
30 ml honey
10 ml balsamic vinegar
2 teaspoons Greek seasoning
1 lemon, cut into wedges
60g crumbled feta cheese

Directions

Step 1
Preheat the oven to 230 degrees C (450 degrees F). Line a baking sheet with parchment paper.
Step 2
Place the broccoli on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Toss to coat and spread in an even layer. Create 4 spaces within the broccoli for the salmon filets and place each filet in an empty space.
Step 3
In a small bowl, combine Dijon mustard, honey, and balsamic vinegar, stirring well. Spread the mustard mixture over each salmon piece and sprinkle evenly with Greek seasoning.
Step 4
Bake in the preheated oven until the fish flakes easily with a fork, about 12 minutes, or until desired doneness. Squeeze lemon juice over the sheet pan and top with crumbled feta.
