Ingredients

60 ml low-sodium soy sauce
45 ml brown sugar
1 small clove garlic, finely chopped
15 ml chopped fresh ginger
1 (170 g) salmon fillet
30 g grated carrots
2 thinly sliced radishes
100 g shredded red cabbage
200 g cooked rice
5 ml sesame seeds (optional)
1 green onion, thinly sliced (optional)

Directions

Step 1
Preheat the oven to 200°C and grease a baking dish with cooking spray.
Step 2
In a small bowl, mix together the soy sauce, brown sugar, garlic, and ginger. Place the salmon in the prepared baking dish, skin side down, and pour the teriyaki sauce over it.
Step 3
Bake in the preheated oven until the fish flakes easily with a fork, about 12 to 15 minutes.
Step 4
To assemble the bowl, place the cooked rice in a bowl, top with the baked salmon, and spoon over the teriyaki sauce from the baking dish. Add the shredded cabbage, grated carrots, and radishes. Garnish with sliced green onions and sesame seeds, if desired.
