Begin by preheating the oven to 200°C (400°F) and lining two rimmed baking sheets with parchment paper.

In a small bowl, combine the olive oil, garlic salt, chervil, basil, and black pepper to create a flavorful herb-infused oil mixture.

Using a sharp knife or pizza cutter, cut each pita bread into 8 triangular wedges.

Arrange the pita wedges in a single layer on the prepared baking sheets and generously brush them with the herb-infused oil mixture. Any remaining wedges can be set aside for the next batch.

Bake the pita crisps on two racks in the preheated oven for approximately 7 minutes, or until they turn a light golden brown and become delightfully crispy. Be sure to switch the baking sheets halfway through for even cooking.

Once baked, transfer the savory herb pita crisps to a serving platter and repeat the brushing and baking process with any remaining pita wedges and oil mixture.
