6 slices bacon, chopped
15mL olive oil
2 white potatoes, diced
salt and freshly ground black pepper to taste
1 onion, finely chopped
4 eggs, whisked
Step 1
In a large skillet, cook the chopped bacon over medium heat until it becomes crispy, which should take about 5 minutes. Transfer the bacon to a plate lined with paper towels to drain, and discard most of the grease.
Step 2
Using the same skillet, add the olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until they turn golden brown and slightly crispy, which should take around 10 minutes.
Step 3
Incorporate the finely chopped onion into the potatoes and cook until the onion becomes translucent, about 5 minutes. Add the crispy bacon back into the skillet and cook for an additional 1 to 2 minutes until everything is heated through.
Step 4
Pour the whisked eggs over the potato mixture, and cook while stirring until the eggs are fully set, which should take about 5 to 6 minutes.
