240 ml balsamic vinegar
60 ml honey
3 large tomatoes, sliced into 1.25 cm slices
1 (450 g) package fresh mozzarella cheese, sliced into 0.6 cm slices
5 ml salt
5 ml ground black pepper
60 ml fresh basil leaves
60 ml extra-virgin olive oil
Step 1
Start by combining balsamic vinegar and honey in a small saucepan over high heat.
Step 2
Bring the mixture to a boil, then reduce the heat to low and let it simmer until it has reduced to about 80 ml, approximately 10 minutes. Set it aside to cool.
Step 3
Arrange the tomato and mozzarella slices in an alternating pattern on a serving platter, creating a visually appealing display.
Step 4
Sprinkle the slices with salt and black pepper, tuck the basil leaves in among the slices, and then drizzle the olive oil and balsamic reduction over the top.
