30 ml vegetable oil
0.5 small red onion, finely diced
1 jalapeno, deseeded and finely minced
0.25 teaspoon ginger
0.25 teaspoon turmeric
0.125 teaspoon cayenne pepper
6 hard-boiled eggs, peeled and diced
1 small tomato, finely diced
30 ml chopped fresh cilantro
Salt, to taste
Step 1
In a non-stick skillet, heat the vegetable oil over medium-high heat. Add the diced red onion and sauté until tender, for about 4 minutes.
Step 2
Next, add the minced jalapeno, ginger, turmeric, and cayenne pepper to the skillet. Sauté until fragrant, for approximately 1 minute.
Step 3
Add the diced hard-boiled eggs to the skillet and stir constantly to blend the flavors, for about 2 minutes.
Step 4
Remove the skillet from the heat and gently fold in the finely diced tomato, fresh cilantro, and salt. Serve the spiced egg salad warm, at room temperature, or chilled.
