1 liter water
80g piloncillo, grated or to taste
1 stick Mexican cinnamon
30g ground coffee
Step 1
In a large pot, combine water, piloncillo, and cinnamon. Bring to a boil over medium-high heat, then reduce to a simmer. Let it simmer for 8 minutes, allowing the flavors to meld together.
Step 2
Remove the pot from the heat and stir in the ground coffee. Cover the pot and let the coffee steep for 5 minutes, allowing the rich aroma to develop.
Step 3
Pour the coffee through a fine mesh strainer twice to ensure a smooth, granule-free texture.
