Ingredients

450g ground beef
3 tablespoons taco seasoning
280g can tomatoes with green chilies (such as Rotel® Original)
250g drained corn
440g can chili beans
115g sharp Cheddar cheese, shredded
240g package cornbread mix
1 egg
80ml milk
Sour cream and chopped green onion for garnish

Directions

Step 1
Preheat the oven to 175 degrees C (350 degrees F).
Step 2
In a deep skillet, cook beef over medium heat until thoroughly browned, breaking it into small pieces, for about 5 to 7 minutes. Remove excess grease. Stir in taco seasoning, tomatoes with green chilies, corn, and chili beans. Add in the Cheddar cheese and mix well.
Step 3
In a bowl, combine cornbread mix, egg, and milk. Spread the batter over the beef mixture in the skillet.
Step 4
Bake in the preheated oven until the cornbread is golden and a toothpick inserted near the center comes out clean, approximately 25 minutes. Garnish each serving with sour cream and chopped green onions. Serve immediately.
