4 large Yukon Gold potatoes, cut into spears
2 tablespoons olive oil
2 tablespoons salted butter, melted
1 tablespoon fresh lemon juice
2 cloves garlic, minced
0.5 teaspoon dried thyme
0.25 teaspoon garlic salt
0.25 teaspoon onion powder
1 pinch freshly ground black pepper to taste

Begin by preheating the oven to 200 degrees C (400 degrees F). Use nonstick cooking spray to grease a 9x13-inch baking dish.

In a large bowl, toss the potato spears with olive oil, melted butter, fresh lemon juice, minced garlic, dried thyme, garlic salt, and onion powder. Season with freshly ground black pepper to taste. Spread the seasoned potato spears in an even layer in the prepared baking dish.

Roast the potato spears in the preheated oven for 20 minutes. Remove the pan from the oven and carefully flip the spears. Continue roasting until the potatoes are golden and cooked through, about 20 minutes more. Sprinkle with dried parsley before serving.
