Ingredients

45 ml oil, such as vegetable, canola or avocado oil
60 ml balsamic vinegar
45 ml soy sauce
60 g brown sugar
2 g crushed red pepper, or more to taste
15 ml minced garlic
15 ml minced ginger
2.5 g kosher salt
567 g salmon filets, cut into 2.5 cm cubes
Nonstick cooking spray

Directions

Step 1
In a bowl, whisk together balsamic vinegar, brown sugar, oil, soy sauce, garlic, ginger, red pepper, and salt until well combined. Reserve half of the marinade for serving.
Step 2
Add the salmon cubes to the remaining marinade in the bowl and gently toss to coat. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, and up to 4 hours.
Step 3
Preheat the air fryer to 200 degrees C for 2 to 3 minutes, or according to manufacturer’s instructions. Spray the air fryer basket with nonstick cooking spray.
Step 4
Place the marinated salmon cubes in a single layer in the air fryer basket, cooking in batches if necessary, and cook until the salmon flakes easily with a fork and is lightly browned and crisp around the edges, for 6 to 8 minutes.
Step 5
Serve the air-fried salmon cubes drizzled with the reserved sauce.
