225g cream cheese, softened
450g deli sliced corned beef or pastrami, cut into 2.5cm pieces
240ml sauerkraut, drained well, squeezed very dry
115g shredded Gruyere cheese
115g shredded Emmenthaler cheese
60ml sweet pickle relish
30ml mayonnaise
30ml sour cream
15ml ketchup
15ml Dijon mustard
5ml Worcestershire sauce
5g freshly ground black pepper
1 pinch cayenne pepper, or to taste

Step 1
Preheat the oven to 200 degrees C (400 degrees F).

In a large bowl, combine the softened cream cheese, corned beef or pastrami, sauerkraut, Gruyere, Emmenthaler, sweet pickle relish, mayonnaise, sour cream, ketchup, mustard, Worcestershire sauce, black pepper, and cayenne pepper. Mix thoroughly until well blended, about 2 to 3 minutes.
Step 3
Transfer the mixture to a baking dish, spreading it evenly and smoothing out the top. Use a fork to roughen up the surface, creating texture and encouraging browning.
Step 4
Bake in the preheated oven until bubbling and browned, for about 25 to 30 minutes. Let cool slightly for about 15 minutes before serving. Enjoy with crackers and bread.
