Ingredients

1 (2.5 kg) corned beef brisket
2 tablespoons pickling spice
1 large orange, sliced into rounds
1 large onion, thinly sliced
2 stalks celery, sliced
120 ml cold water
85 g butter, divided
1 large head cabbage, cored and sliced
240 ml Golden Delicious apples, cored and quartered with peel

Directions

Step 1
Preheat the oven to 150°C (300°F). Line a 23x33 cm roasting pan with aluminum foil, leaving enough overhang to cover and seal the roast.
Step 2
Rinse the brisket and pat dry. Rub with pickling spice, then place in the prepared roasting pan. Arrange the orange, onion, and celery slices on and around the brisket. Pour in 120 ml water, then tightly wrap the aluminum foil over the roast, ensuring the ends are sealed.
Step 3
Bake in the preheated oven until the meat is tender, about 4 hours.
Step 4
About 45 minutes before the roast is done, heat the remaining 120 ml water and 42 g butter in a large pot. Add cabbage and apples, cover, and simmer over low heat for about 30 minutes, shaking the pot occasionally to prevent sticking.
Step 5
Top the cabbage and apples with the remaining butter and serve with sliced corned beef.
