Step 1
In a large skillet, heat over high heat. Add the pork chops and sear until they develop a golden brown crust, approximately 1 to 2 minutes per side. Once browned, transfer the pork chops to the slow cooker.
Step 2
In a mixing bowl, combine the brown sugar, ketchup, minced onion, and lemon juice. Spoon the mixture over the pork chops in the slow cooker. Cover and cook on Low for 4 to 6 hours, or until the pork chops are very tender. Use an instant-read thermometer to ensure the internal temperature reaches at least 63°C (145°F).
