120 ml vegetable oil
30 ml vanilla extract
250 g all-purpose flour, or more as needed
45 g white sugar
15 ml ground cinnamon
15 ml ground nutmeg
15 ml baking powder
5 g salt

Begin by preheating your waffle iron according to the manufacturer's instructions.

In a large bowl, whisk the eggs until fluffy. Then, mix in the milk, vegetable oil, and vanilla until well combined.

In a separate bowl, combine the flour, sugar, cinnamon, nutmeg, baking powder, and salt. Slowly pour this mixture into the egg mixture, stirring as you pour. Mix until the batter is smooth with few to no lumps. Be careful not to overmix. If the batter is too thin, add more flour. If it's too sticky or thick, add more milk.

Ladle the batter onto the preheated waffle iron. Cook until the waffle is golden brown and the iron stops steaming, which should take about 2 to 5 minutes. Repeat this process to make the remaining waffles.
