400g penne pasta
450g fresh asparagus, trimmed and cut into 5cm pieces
1 large lemon, zested and juiced
100g grated Parmesan cheese
120ml olive oil
salt to taste
freshly cracked black pepper to taste
Step 1
Begin by filling a large pot with lightly salted water and bringing it to a boil. Add the penne and cook for about 8 minutes, until it is slightly firm.
Step 2
Stir in the asparagus and continue to boil for an additional 3 minutes, until the pasta is al dente and the asparagus is tender-crisp. Drain the pasta and asparagus.
Step 3
Transfer the penne and asparagus to a large bowl. Gently fold in the lemon zest, lemon juice, Parmesan cheese, olive oil, salt, and black pepper until well combined.
