125g white sugar
45g all-purpose flour
60g butter, cubed
1.5 teaspoons ground cinnamon
180g all-purpose flour
2 teaspoons baking powder
80g applesauce
1 egg
80ml milk
300g fresh blueberries
Step 1
Preheat the oven to 200 degrees C (400 degrees F). Lightly grease muffin cups or line with muffin liners.
Step 2
In a small bowl, use a fork to mix together 1/2 cup of sugar, 1/3 cup of flour, cubed butter, and cinnamon until the mixture resembles coarse crumbs. Set the topping aside.
Step 3
In a large bowl, combine 1 1/2 cups of flour, the remaining 3/4 cup of sugar, and baking powder.
Step 4
In a separate bowl, place the applesauce into a 1-cup measuring cup, add the egg, and enough milk to measure 1 cup. Stir well, then mix into the flour mixture until just combined. Gently fold in the fresh blueberries.
Step 5
Fill the prepared muffin cups to the top and sprinkle with the prepared topping.
Step 6
Bake in the preheated oven until golden and the tops spring back when lightly pressed, for 20 to 25 minutes.
