Ingredients

80 ml low-sodium soy sauce
22.5 ml Hoisin sauce
15 ml toasted sesame oil
10 ml brown sugar
5 ml sriracha, or to taste
225 grams whole-grain spaghetti (such as Barilla®)
30 ml vegetable oil
225 grams Baby Bella mushrooms, sliced
225 ml snow peas, halved
1 large red bell pepper, cored and sliced
1 large carrot, peeled and julienned
1 small onion, peeled and vertically sliced
2 cloves garlic, minced

Directions

Step 1
In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, brown sugar, and Sriracha until well blended; set aside.
Step 2
Bring a large pot of salted water to a boil. Add the pasta and cook until nearly tender with a bite, for about 7 to 8 minutes. Drain well.
Step 3
Meanwhile, heat the vegetable oil over medium-high heat in a large skillet or wok. Add the mushrooms, snow peas, red bell pepper, carrot, onion, and garlic. Cook, stirring frequently, until just tender, for about 4 to 6 minutes.
Step 4
Add the cooked spaghetti and the prepared sauce to the skillet. Toss with the veggies until well coated. Allow the flavors to meld by simmering for 2 minutes, then serve.
