170g butter, softened
100g white sugar
100g firmly packed brown sugar
1 egg
1 teaspoon vanilla extract, or more to taste
240g peanut butter
215g unbleached flour
4g baking soda
280g chocolate chunks (such as Ghirardelli® Bittersweet Chocolate)
Step 1
Preheat the oven to 190 degrees C (375 degrees F).
Step 2
In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy using an electric mixer. Beat in the egg and vanilla. Add the peanut butter and beat until well combined.
Step 3
In a separate bowl, sift together the flour and baking soda. Gradually mix into the butter mixture until thoroughly combined. Gently fold in the chocolate chunks until evenly distributed.
Step 4
Spread the batter into a 13x9-inch baking dish and bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before cutting into squares.
