Ingredients

450g small red potatoes, cut into 2.5cm pieces
900g fresh, whole, young green beans, trimmed
2 teaspoons salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon red pepper flakes, optional
6 slices bacon
1 onion, diced
2 Tablespoons minced garlic
475ml chicken broth or stock
900g skinless, boneless chicken thighs
1/2 teaspoon paprika
1/2 onion, sliced

Directions

Step 1
Preheat a 5-quart slow cooker on the High setting.
Step 2
Spread the red potato pieces in the bottom of the slow cooker, then layer the green beans on top. Season with salt, pepper, and red pepper flakes.
Step 3
In a large skillet, cook the bacon over medium-high heat until evenly browned, about 10 minutes. Drain on paper towels, crumble, and set aside.
Step 4
In the same skillet, cook the diced onion until just softened, about 3 to 5 minutes. Add the garlic and cook for 30 seconds before removing from heat. Distribute the skillet contents over the green beans. Pour the chicken broth or stock over everything.
Step 5
On a 30x60cm sheet of foil, place the chicken thighs on one half of the sheet. Lightly season each thigh with salt, pepper, and paprika. Layer the onion slices over the chicken thighs and enclose them in the foil to create a sealed packet.
Step 6
Place the chicken packet on top of the green beans, cover, and slow cook until the vegetables are tender and the chicken is fully cooked, about 4 hours on High or 6 hours on Low. Use an instant-read thermometer to ensure the chicken reaches 74 degrees C at the center.
Step 7
To serve, place the foil-packet chicken thighs, green beans, and potatoes on a serving platter and sprinkle with the reserved cooked bacon crumbles.
