4 medium potatoes, peeled and thinly sliced
3 tablespoons salt, plus extra for seasoning
1 liter oil for deep frying

Begin by peeling the potatoes and slicing them thinly. As you slice, place the potato slices in a large bowl of cold water to prevent browning.

Once all the potatoes are sliced, drain the water and rinse the slices under cold water. Refill the bowl with water, add 3 tablespoons of salt, and return the potato slices to the bowl. Allow them to soak in the salty water for at least 30 minutes to infuse flavor.

After soaking, drain and rinse the potato slices once more, then pat them dry with paper towels.

In a deep-fryer, heat the oil to 185°C (365°F).

Working in small batches, carefully fry the potato slices until they turn a beautiful golden color. Use a slotted spoon to remove the chips from the oil and place them on paper towels to drain. Repeat until all the slices are fried.

Season the potato chips with additional salt to taste.
