340g box vanilla wafer cookies
2 tablespoons melted butter
2 lemons
397g can sweetened condensed milk
2 large eggs, separated
4 tablespoons white sugar
Step 1
Begin by preheating the oven to 165 degrees C (325 degrees F).
Step 2
Use a food processor or crush 28 wafer cookies by hand. Combine the crushed cookies with melted butter and press into the bottom of a 23cm pie pan. Stand the remaining whole wafer cookies around the edge of the pan.
Step 3
Zest 1 tablespoon of lemon and set aside. Squeeze 1/2 cup of fresh lemon juice. In a mixing bowl, combine the lemon juice, lemon zest, sweetened condensed milk, and egg yolks. Mix thoroughly and pour into the prepared crust.
Step 4
Bake in the preheated oven for 15 minutes. Remove from the oven, but leave the oven on.
Step 5
In a glass bowl, beat the egg whites on high speed, slowly adding sugar, until almost stiff peaks form. Use a spatula to arrange the meringue on the pie, spreading it up to where it touches the standing wafer cookies.
Step 6
Bake in the preheated oven until browned, about 15 minutes, checking frequently. Let cool completely for 20 to 30 minutes. Chill in the refrigerator for at least 4 hours.
