Ingredients

60g butter
900g cubed beef stew meat
30g all-purpose flour
1 (400g) can beef broth
250ml beer
1 onion, thinly sliced
2 cloves garlic, minced
15ml packed brown sugar
5g dried thyme
1 bay leaf
1 (425g) can mixed vegetables, drained

Directions

Step 1
Preheat the oven to 175°C (350°F).
Step 2
In a Dutch oven over medium-high heat, melt the butter. Brown the beef in two batches, stirring often. Remove the beef from the Dutch oven and set aside. Stir in the flour.
Step 3
Add the beef broth, beer, onion, garlic, brown sugar, thyme, and bay leaf. Bring to a boil. Return the beef to the pot. Cover and bake at 175°C (350°F) for 1 1/2 hours.
Step 4
Add the mixed vegetables. Cover and bake for an additional 1 hour, or until the beef is tender. Remove the bay leaf and serve.
