2 cod fillets (225g each), halved
1 tbsp Cajun seasoning
1/2 tsp lemon pepper
1/4 tsp salt
1/4 tsp ground black pepper
2 tbsp butter
1 lemon, juiced
2 tbsp chopped green onion (white part only)
Step 1
Prepare the grill by stacking about 15 charcoal briquettes into a pyramid shape. Optionally, lightly drizzle the coals with lighter fluid and let them soak for 1 minute before lighting with a match. Once the coals are lit, wait for about 10 minutes for the fire to spread to all the coals. Let the coals burn until a thin layer of white ash covers them. Lightly oil the grates.
Step 2
Season both sides of the cod fillets with Cajun seasoning, lemon pepper, salt, and black pepper. Place the fillets on a plate and set aside.
Step 3
In a small saucepan over medium heat, melt the butter, stir in the lemon juice and green onion, and cook until the onion is softened, about 3 minutes.
Step 4
Preheat the grill and place the seasoned cod fillets on the grates. Grill the fillets until they are browned and flaky, approximately 3 minutes per side. Baste the fillets frequently with the butter mixture while grilling.
Step 5
Remove the grilled fillets from the heat and let them rest for about 5 minutes.
