Ingredients

2 tbsp olive oil
1.5 cups sliced brown or white mushrooms
1 large yellow onion, diced
3 cloves garlic, minced or crushed
1 red bell pepper, diced
salt, to taste
freshly ground black pepper, to taste
pinch of cayenne pepper
4 slices smoked ham
120 g shredded Monterey Jack cheese
340 g ricotta cheese
60 g Monterey Jack cheese, grated
15 g finely grated Parmigiano-Reggiano
1 tsp kosher salt, or to taste
0.25 tsp freshly ground black pepper
1 pinch nutmeg
2 tbsp freshly chopped Italian parsley

Directions

Step 1
Prepare all the ingredients.
Step 2
In a skillet over medium-high heat, heat olive oil. Add mushrooms, onions, and a pinch of salt. Sauté until mushrooms start to turn golden brown and onions are transparent (about 5 minutes).
Step 3
Create space in the center of the pan, add garlic, and cook until fragrant (about 30 seconds). Add bell peppers and sauté until they just start to soften (about 2 minutes). Season with black pepper, cayenne, and more salt if needed.

Remove from heat, transfer to a baking dish, and preheat the oven to 200°C (400°F).
Step 5
In a bowl, combine ricotta, Parmesan, and Monterey Jack cheese. Season with parsley, salt, pepper, and nutmeg. Mix well to incorporate all ingredients.

Divide the filling between the 4 slices of ham and roll each slice into a tube.

Place the ham rolls on top of the vegetable mixture and sprinkle with grated Monterey Jack cheese.

Bake in the preheated oven until the cheese is melted and everything is heated through (about 25-30 minutes).
