1 package (490g) puff pastry sheets
2 Tbsp all-purpose flour, divided
3 Tbsp chipotle mayonnaise
9 slices thinly sliced deli roast beef (about 225g)
5 slices Cheddar cheese
1 egg
1 Tbsp water
1 Tbsp Everything Bagel Seasoning
Step 1
Thaw the puff pastry sheets in the refrigerator for 3 to 4 hours or at room temperature for 20 to 40 minutes until the pastry is cold but pliable.
Step 2
Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
Step 3
On a work surface, sprinkle 1 tablespoon of flour and lightly dust a rolling pin with flour. Unfold one puff pastry sheet and roll it out to about 30x30cm (12x12 inches). Cut the pastry into 9 squares, approximately 10x10cm (4x4 inches) each, and place them on the prepared baking sheet.
Step 4
Leaving a 1.25cm (1/2-inch) border, brush the center of each square with about 1 teaspoon of chipotle mayonnaise.
Step 5
Fold a slice of roast beef to fit inside the border of each square, then top the roast beef with a 7.5cm (3-inch) square slice of Cheddar cheese. Use any remaining cheese trimmings to complete all 9 squares.
Step 6
On a floured work surface, unfold the second puff pastry sheet and roll it out to a 30x30cm (12-inch) square. Cut it into 9 equal pieces.
Step 7
In a small bowl, whisk together the egg and water to make an egg wash.
Step 8
Brush the 1.25cm (1/2-inch) clear border of the bottom pastry squares with the egg wash. Carefully place each top pastry square over the bottom, crimp the edges together with a fork, then brush the tops with egg wash and sprinkle with Everything Bagel Seasoning.
Step 9
Bake for 18 to 20 minutes or until golden brown. Let cool on a wire rack for 8 to 10 minutes before serving warm.
