Chocolate-Kissed Peanut Butter Cookies

Ingredients

375 g peanut butter
225 g shortening
140 g white sugar
140 g brown sugar
60 ml milk
2 eggs
10 ml vanilla extract
375 g flour
10 g baking soda
5 g salt
60 g white sugar, or as needed
2 (340 g) bags milk chocolate candy kisses (such as Hershey's Kisses®), unwrapped

Directions

Step 1
In a large bowl, use an electric mixer to beat together peanut butter, shortening, 140 g white sugar, brown sugar, milk, eggs, and vanilla extract until creamy and smooth.
Step 2
In a separate bowl, sift together flour, baking soda, and salt. Gradually fold the flour mixture into the peanut butter mixture to form a smooth dough. Cover the bowl with plastic wrap and refrigerate for about 1 hour until chilled.
Step 3
Preheat the oven to 175°C (350°F).
Step 4
Pour 60 g white sugar into a shallow bowl. Scoop the chilled dough into 2.5 cm balls, roll the balls in sugar, and place them 4 cm apart on baking sheets.
Step 5
Bake the cookies in the preheated oven for 9 minutes, then rotate the cookie sheets and continue baking for another 3 minutes. Press a chocolate kiss about halfway down into the center of each cookie. Bake for an additional 2 to 3 minutes until the chocolate begins to melt. Cool the cookies on wire racks until the chocolate hardens, for at least 3 hours.
