190g + 30g sugar
120ml oil
1 egg, at room temperature
1/2 teaspoon vanilla extract
180g all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cream of tartar
120g shredded zucchini
Step 1
Preheat the oven to 180°C (350°F) and grease a loaf pan with cooking spray.
Step 2
In a large bowl, mix together 190g of sugar, oil, egg, and vanilla extract. In another bowl, combine the flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cream of tartar. Add the flour mixture to the oil mixture and stir until well combined. The batter will be very thick. Stir in the shredded zucchini until well incorporated.
Step 3
In a small bowl, whisk together the remaining 30g of sugar and ground cinnamon. Pour half of the batter into the prepared pan, smooth it with a spatula, and sprinkle half of the cinnamon sugar on top. Repeat with the remaining batter and cinnamon sugar.
Step 4
Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean. Allow the loaf to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
