4 fillets of bluefish (1.8 kg)
1 cup (240 ml) orange juice
60 ml fresh lime juice
60 ml fresh lemon juice
60 ml olive oil
15 ml dry white wine
kosher salt and ground black pepper, to taste
60 ml citrus-flavored seafood rub
Step 1
In a large bowl, place the bluefish fillets. Add the orange juice, lime juice, lemon juice, olive oil, white wine, salt, pepper, and seafood rub. Stir well to coat the fish, and leave the squeezed lemon and lime halves in the bowl. Marinate for at least 30 minutes.
Step 2
Preheat the grill to high heat and oil the grate.
Step 3
Place the marinated fish fillets on the grill, discarding the marinade. Grill for 4 minutes on each side or until the fish flakes easily with a fork. Transfer to a serving platter, and remove the dark blue part of the fish before serving.
