Step 1
Preheat the oven to 175°C (350°F) and grease 10 cups of a muffin tin or line with paper muffin liners.

In a bowl, combine all-purpose flour, sugar, coconut flour, baking powder, cinnamon, salt, and nutmeg.

In a large bowl, lightly whisk the egg and then add applesauce, coconut milk, vegetable oil, honey, and vanilla extract. Stir in the flour mixture until just combined. Scoop the batter into the prepared muffin pan.

Bake in the preheated oven until the tops spring back when lightly pressed and a toothpick inserted into the center comes out clean, about 30 minutes.
