800 g new potatoes, halved
240 ml sour cream
120 ml mayonnaise
60 g chopped fresh chives
Salt and freshly ground black pepper to taste
30 g chopped fresh chives for garnish
Step 1
Place the halved potatoes in a pan and add just enough water to cover them. Bring to a boil, then simmer over low heat until tender, about 10 minutes. Drain and cool the potatoes under cold running water.
Step 2
In a large bowl, combine sour cream, mayonnaise, and half of the chopped chives. Gently fold in the cooled potatoes. Season with salt and pepper. Garnish with the remaining chopped chives.
