Ingredients

30 ml olive oil, divided
680 g bulk hot Italian sausage
680 g cremini mushrooms, trimmed and quartered (about 9 cups)
22.5 ml finely chopped garlic (from 4 medium garlic cloves)
1 (8-oz.) package cream cheese, softened
1 (5.2-oz.) package soft Gournay cheese product with basil & chives (such as Boursin)
85 g pre-shredded low-moisture part-skim mozzarella cheese (about 180 ml)
85 g Parmesan cheese, finely shredded (about 180 ml), divided
Cooking spray
240 ml panko (Japanese-style breadcrumbs)
30 ml unsalted butter, melted
30 ml chopped fresh flat-leaf parsley

Directions

Step 1
Preheat the oven to 175°C (350°F).
Step 2
In a large nonstick skillet over medium-high heat, add 15 ml of oil. Cook the sausage, stirring often, until browned and crumbled, about 8 minutes.
Step 3
Using a slotted spoon, transfer the cooked sausage to a large bowl, leaving the drippings in the skillet.
Step 4
Return the skillet to medium-high heat. Add the remaining 15 ml oil to the drippings. Add the mushrooms and cook, stirring occasionally, until softened, browned, and most of their liquid is released, 8 to 10 minutes.
Step 5
Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Stir in the cream cheese and Gournay cheese, cooking and stirring constantly until the cheese is melted and evenly coats the mushrooms, about 2 minutes.
Step 6
Transfer the mushroom mixture to the bowl with the sausage, and stir in the mozzarella and 120 ml of the Parmesan cheese until evenly combined.
Step 7
Spoon the mixture into an even layer in a 33 x 23 cm (13- x 9-inch) baking dish coated with cooking spray.
Step 8
In a small bowl, mix together the panko, melted butter, and the remaining 60 ml Parmesan cheese. Sprinkle the mixture evenly over the top of the mushroom mixture.
Step 9
Bake in the preheated oven until the topping is golden, about 25 minutes. Sprinkle with parsley and serve hot.
