Ingredients

4 cups diced seedless watermelon
1 cup white sugar
3 tablespoons lemon juice
1 dash salt
60 ml cold water
7 g unflavored gelatin
240 ml chilled heavy cream

Directions

Step 1
In a large mixing bowl, combine the diced watermelon, sugar, lemon juice, and salt. Stir to coat evenly, then cover the bowl with plastic wrap and refrigerate for 30 minutes.

After refrigerating, blend the mixture until smooth, then return it to the bowl.

In a saucepan, pour in the cold water and sprinkle the gelatin over it. Let it stand for 1 minute, then cook over low heat for 2 minutes. Stir the gelatin mixture into the blended watermelon mixture, then add the heavy cream. Beat with an electric hand mixer at medium speed until the mixture is fluffy.
Step 4
Transfer the mixture into an ice cream maker and freeze according to the manufacturer's directions until it reaches a 'soft-serve' consistency. Transfer the gelato to a lidded plastic container, cover the surface with plastic wrap, and seal. For best results, let the gelato ripen in the freezer for at least 2 hours or overnight.
