Ingredients

Vegetable oil, for frying
60 g all-purpose flour
10 g cayenne pepper
Pinch of salt
1 large Spanish onion, thinly sliced

Directions

Step 1
Preheat the deep fryer to 190°C (375°F).
Step 2
In a large bowl, mix together the flour, cayenne pepper, and salt. Add the onion slices and toss until they are well coated with the flour mixture.
Step 3
Shake off any excess coating from the onion slices. Carefully lower the onion slices into the hot oil in batches. Fry until they turn golden and tobacco-colored, about 3 to 5 minutes. Use a slotted spoon to transfer the fried onion slices to a paper towel-lined plate to drain and crisp up.
