4 soft-shell crabs
950 ml oil for frying, or as needed
120 ml milk
1 large egg
120 g all-purpose flour
salt and pepper to taste
Step 1
Start by preparing the crabs. Lift one pointed side of the top shell of a crab and remove the gills. Repeat on the other side. Twist and pull out the tail flap on the bottom, then cut behind the eyes and remove the face. Clean the remaining crabs the same way, rinse them thoroughly, and pat dry.
Step 2
Heat the oil in a deep fryer to 180°C (365°F).
Step 3
In a shallow bowl, whisk together the milk and egg. In another shallow bowl, combine the flour, salt, and pepper. Lightly season each crab with salt, then dredge in flour, dip into the egg mixture, and coat with flour again.
Step 4
Carefully lower the crabs into the hot oil, working in batches if necessary. Fry until golden brown on one side (about 1-2 minutes), then carefully turn and cook until golden brown on the other side (another 1-2 minutes). Drain the fried crabs on paper towels.
Step 5
Serve the crispy golden soft-shell crabs immediately for optimal enjoyment.
