Ingredients

1 tbsp olive oil
3 chicken breasts (butterflied)
Salt and ground black pepper to taste
90 g all-purpose flour
1 tbsp ground paprika
2 large eggs, beaten
200 g seasoned bread crumbs
1 large lemon, zested

Directions

Step 1
Prepare the oven and baking sheet by preheating to 220°C (425°F) and lining the sheet with foil, then drizzling olive oil over the foil before placing it in the oven.
Step 2
Place the chicken breasts between plastic wrap and pound them to 1/4-inch thickness. Season both sides with salt and pepper.
Step 3
In separate shallow bowls, mix flour and paprika, whisk eggs with salt and pepper, and combine bread crumbs with lemon zest.
Step 4
Dredge each chicken piece in flour, then dip into the beaten egg, and coat with the bread crumbs. Place the breaded chicken on a plate.
Step 5
Remove the baking sheet from the oven and arrange the chicken on it. Drizzle olive oil over each piece of chicken.
Step 6
Bake the chicken for 5 to 6 minutes, then flip and continue baking for another 5 to 6 minutes until the chicken is no longer pink in the center and the breading is lightly browned. Ensure the chicken reaches an internal temperature of at least 74°C (165°F).
