2 eggs
180 g biscuit mix
50 g grated Parmesan cheese
1 tsp salt
1 tsp ground black pepper
1 bunch fresh asparagus, trimmed

In a large skillet, heat the vegetable oil over medium heat.

In a separate bowl, mix the biscuit mix, Parmesan cheese, salt, and black pepper.

Dip the asparagus into the milk mixture.

Coat the asparagus in the dry ingredient mixture, then repeat for a second layer.

Carefully place the coated asparagus in the hot oil and fry until golden brown, which takes about 2 to 4 minutes.
