Ingredients

4 large potatoes
1 yellow onion
1 egg, beaten
1 tsp salt
ground black pepper, to taste
2 tbsp all-purpose flour (or more as needed)
1 cup vegetable oil for frying (or as needed)

Directions

Step 1
Preheat the oven to 200°F (95°C).

Grate the potatoes and onion finely into a large bowl and drain off any excess liquid.

Add the beaten egg, salt, and pepper to the bowl. Then, mix in enough flour to thicken the mixture (approximately 2 to 4 tablespoons).

Heat 1/4 inch of oil in a heavy skillet over medium-high heat. Spoon two or three 1/4-cup mounds of batter into the hot oil and flatten them with the back of a spatula to create 1/2-inch-thick pancakes.

Fry the pancakes, turning them once, until they are golden brown. Transfer them to a plate lined with a paper towel to drain, and keep them warm in the oven until serving. Repeat until all the potato mixture is used.
