500 g seeded, grated summer squash
125 g all-purpose baking mix (such as Bisquick®)
80 ml milk
1 egg
25 g grated Parmesan cheese
15 g melted butter
salt and ground black pepper to taste
1 pinch garlic and herb seasoning, or to taste
80 ml oil for frying, or as needed
Step 1
In a large bowl, combine grated squash, baking mix, milk, egg, Parmesan cheese, melted butter, salt, pepper, and garlic-herb seasoning.
Step 2
Heat oil in a large skillet over medium heat. Drop spoonfuls of the batter into the hot oil, about 2.5 cm apart. Cook for 1 ½ to 2 minutes, then flip and continue cooking until lightly browned on the other side. Drain on a paper towel-lined plate. Repeat with the remaining batter, adding more oil to the skillet as needed.
